Tuna Salad



Something light for the summer 



Preparation time 15min| Servings 4
You need:
  • 250g of pasta(pene)
  • 1 can of tuna(~130g)
  • handful of baby spinach
  • ¼ of red paprika or you can mix red, green and yellow paprika
  • 1 garlic clove  
  • 1 shallot onion
  • 2 tomatoes
  • half cucumber 
  • a drop of olive oil
  • salt
  • paper
  • nutmeg
  • lemon juice of half lemon

    Cook the pasta in a large pot of boiling water until it’s cooked through but still firm(al dente)

    Put your wok or big enough saucepan on a medium heat, add a drop of olive oil and fine chopped garlic clove and shallot onion and cook them while stirring often until they become golden. Add a handful of baby spinach and paprika and add around 50ml of water and cook slowly while stir, don’t forget to add a hint of nutmeg, salt and pepper. After you see the spinach is coming down give it a good stir. Cover your wok and leave to cool down.

    In a bowl, big enough, put in your drained pasta, spinach with paprika and tuna.

    Dice your tomatoes and cucumber and add to the bowl, squeeze half a lemon and pour over your pasta salad and stir.

    Note: Add salt and pepper by your individual need.

    Cover the bowl and put in the fridge until it cools down.
