Egg Muffins



I was working today but I decided that I need to take a moment for myself and go to the gym, now that I have a full time membership and Robert decided to tag along.

I got back to my routine with my weightlifting  and total body tone and I enjoyed it and all I could hear was loud music and Robert’s saying a good housewife must know how to cook good but also look good and I plan to do both with A++++++.
Hitting the gym felt good and it is only appropriate that I cook something healthy.

Egg muffins

For a portion of 12 muffins| perfect for breakfast| bake for 20 min| Fan oven 180|Gas 6

Ingredients:

  • 5 eggs
  • milk or cream 
  • pepper 
  • salt 
  • different vegetables  
  • mozzarella cheese 
  • butter

Preparation

Preheat the oven on 180 degrees and butter your muffin tins. In a bowl crack eggs, add salt, pepper add milk or cream and whisk it like you’re making an omelette.

Chop the vegetables you picked I used half of a courgette, 3 small tomatoes and 1 baby onion. I placed vegetables in the muffin tins and pore my egg mixture into it. I finished with sprinkling mozzarella cheese on top and placing the tin in the oven for 20min.
This is the best post workout protein meal.
