So to spoil my lovely Boyfriend of mine I decided to bake
something healthy but good, to treat him after long working hours.
To be honest they are so easy to make, that I make them at
least once a week and they make everybody so happy.
Baking time 20-25 min| Fan oven 200 °C | Gas oven 6| ~ 24

2 eggs

1 ¾ cup flower (~330 ml)
·
¼ cup sugar or 3Tbs honey (~60 ml)
·
½ cup milk for porridge (~125ml)
·
½ cup milk for the mixture if needed

½ cup porridge oats (~125ml)
·
¼ cup unsalted butter (~60ml)
·
2tsp baking powder
·
200g strawberries
·
2 bananas

TIP: you can use whatever you want instead of strawberries
and bananas, I recommend blueberries they can be very nice.
You need three bowls.
Preheat the oven.
In the first bowl mix flower and baking powder. In the
second bowl mix porridge oats and milk, I used quick oats so I put them in
microwave oven for 2mins. In the third bowl mix eggs, butter and sugar or honey
and beat till bubbly.
TIP: put butter in microwave oven for 50s to soften.
Add the mixture of eggs, butter and sugar into the first
bowl and stir well, add porridge oats and give it another good stir. While
stirring you can see if the mixture is too thick, if it is like mine was just
add a bit of milk.
The mixture must be just right not to thick and not to
liquid, but just the right to pure in the tin.
Fine chop strawberries and bananas and mix them in.
TIP: instead of greasing the muffin tins just use muffin
papers that you can buy in any shop or cut small squares of baking paper and
pour your muffin mixture into that.
Fill the muffin tins with 1/3 of mixture and put them in the
oven for 20-25min, after they’re baked leave them for 10min to cool down before
serving.
TIP: if you are not sure if they are baked, use a toothpick
to check it. Stick the toothpick in the middle of the muffin, if the toothpick
is clean when puling it out then they are baked if not leave for a couple more
minutes.
